CROTON-ON-HUDSON, N.Y. Nowhere is spring more evident than the Blue Pig in Croton, where freezers are chilling, strawberries are sprouting and owner Lisa Moir has already ordered rush deliveries on cream and berries.
I opened last year, March 21st, the first day of spring, to 5 or 6 inches of snow on the ground, and I had people coming in the first 10 days asking for soup, Moir said. She promised herself she would never open so early again, and pushed the opening day back to April 1. Who would know? How do you plan for this? she said.
Now, opening day is exactly one week away, and Moir is removing fall leaves from the patio and bringing the rooftop strawberry beds up to par for what will likely be an early spring harvest.
Warm weather might be good for business, but she says she finds it disturbing, that March is so warm, and worries about extreme summer temperatures and storms, especially storms that could knock out electricity to a business dependent on freezers.
I care more about the earth, said Moir, who modified many aspects of her business to be greener, including compostable cups and locally sourced cream.
Some flavors to look forward to on the Blue Pigs opening day are fresh lemon ice cream, banana white chocolate with toasted nuts and red velvet cake.
