Peace, Love, Pork: New Eatery Plans July Opening In Wappingers Falls

WAPPINGERS FALLS, N.Y. -- Peace. Love. Pork. Such is the mantra of Heritage Food + Drink, a new American farm-to-table restaurant set to open mid to late July in Wappingers Falls.

Owner Jesse Camac, a Poughkeepsie resident and 12-year veteran of the restaurant industry, said his goal is to promote Heritage's commitment to farm-to-table, with a focus on quality and simplicity. 

"We want to serve guests food that people recognize, using the best ingredients in the area, while making everything from scratch," he said.

All food will be sourced locally and many items will be cooked on a wood-burning grill. The applewood, in fact, will come from his wife's family's farm in Milton.

Heritage will do most everything in-house, including making its own sauces, burger blend, and buns.

'We want to do amazing local food with great ingredients," said Camac. "That's the heart and soul of our operation."

One of the main features of the two-floor 6,400-square-foot space will be an open kitchen with a large glass wall where guests can see their food being prepared. 

A gigantic wood-burning grill, which can be adjusted up or down depending on what's cooking, will be front and center, making the kitchen part of the Heritage experience.

The restaurant, with about 250 seats including two bars and dining areas as well as two private rooms, will also feature local craft beer on tap, such as Mill House Brewing Company in Poughkeepsie.
